The spring produce season is officially here. With it comes some of our early seasonal favorites such as asparagus, arugula, beets, and chives just to name a few. With so many fresh options at the farmers’ markets and in our favorite grocery stores right now, we are inspired to try something new. Here are a few we are loving right now...and don’t hesitate to share these recipes with your clients...it’s a great way to remind them that what they put in their body is just as important as what they put on it. Spring Vegetable and Arugula Salad

Not only is this bright and colorful salad tasty, you can easily throw it together in a moments notice. We suggest having a fresh supply of vegetables which have been pre-blanched and shocked in ice water in your fridge. Then you can combine the asparagus, snap peas, broccoli, and favas together whenever you are in the mood. When you are ready to eat, toss in the salted cucumber, arugula, red onion, fresh mozzarella, and creamy labne...which adds richness and tang to the salad.

Spring Salad with Herbed Goat Cheese

This recipe might be exactly what like what springtime in a bowl tastes like. Asparagus, baby spinach, peas, and radishes, topped with chopped fresh mint and herbed goat cheese will change your salad game. Even better, this one can even be made a day ahead. Just combine all the ingredients with the dressing when ready, and enjoy with a chilled glass of Sauvignon Blanc.

Roasted-Beet Salad with Horseradish Crème Fraîche and Pistachios

Not only are beets in season and at their most flavorful and sweetest in April, but so is horseradish. Typically combined together in recipes, this combo, when topped with a simple dressing with lemon, herbs, shallots, pistachios and honey, is guaranteed to become your favorite spring salad.

Spicy Thai-Style Zucchini Carrot Salad

There’s never been a more satisfying and flavorful salad. Crunchy, hearty and bursting with flavor, zucchini and carrot ribbons mixed with fresh herbs (think mint and cilantro), and roasted peanuts before being tossed in a Thai inspired tart dressing. So good, you might eat it all day, every day.
